Contemplating Vegetables

Another problem with my weight loss is just the types of foods I happen to eat. I love bread, red meat, and potatoes. I love starch, including corn. If I hear "eat your veggies" one more time, the source is going to get throttled.

However, I also know that eating vegetables is a large part of weight loss. I have myself somewhat convinced that I hate vegetables, and thus, I never eat them. But that is not quite true.

So, we're making lists today! It will just be a reminder of what I do like to eat veggie-wise.

My Favorite Vegetables

1. Carrots
2. Cucumbers (Especially lemon cucumbers grown fresh in our garden. Yum!)
3. Tomatoes
4. Lettuce/greens (I love my greens . . .salads are the best!)
5. Leeks
6. Fennel
7. Corn (Yes, it's a starch but it is also a vegetable!)
8. Peas
9. Garlic
10. Asparagus
11. Artichokes

Things I can't Touch

1. Peppers--all types (unless I want to be in the bathroom all night)
2. Onions (can't stand the texture)
3. Over-cooked squash (Yuck!)

Things I Have Not Tried, but Want To

1. Eggplant (heard it is delicious; I should learn how to cook it)
2. Spaghetti squash

Finally, Things I Like Under Limited Circumstances

1. Squash (grilled only--can't stand it steamed)
2. Spinach (fresh only)

Great reminder for myself: I actually like more than I think I do. Now, I am going to have toast and an apple and get ready for my chiropractic appointment. Think spinach greens and cucumbers with balsamic vinegar would make a good lunch? :)

I found you through LJ (I'm mightymezzo)...I also started a weight loss journey through Weight Watchers two years ago. At my lowest (June 2008) I had dropped 70 pounds but then I started training for a marathon and my weight loss has been up and down since then. I'm waiting for the marathon to be over (October 19!) and then I'm really going to buckle down and get to my goal weight. I look forward to reading your blog!!!
